A ground-chicken crust standing in for dough, real pizza toppings, real crust rim, none of the carbs.
Preheat the oven to 400°F (200°C). Line a baking sheet or pizza pan with parchment paper. Don't skip this or the chicken will stick. Lightly spray the paper with cooking spray.
In a medium bowl, combine the ground chicken, grated Parmesan, egg, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Mix with a fork or clean hands until fully incorporated.
Transfer the chicken mixture onto the parchment paper. Cover with a second sheet of parchment or plastic wrap, then press the meat out evenly into a 10–12 inch circle, about ¼-inch thick. Remove the top sheet, keeping the edges slightly thicker to form a crust rim.
Bake at 400°F (200°C) for 15–20 minutes, until the meat is fully cooked, firm to the touch, and starting to turn golden at the edges.
If any excess moisture or grease pools on top, gently pat it dry with a paper towel before topping.
Spread a thin layer of pizza sauce over the crust, keeping it light so the crust doesn't get soggy. Add shredded cheese and toppings. Return to the oven for another 8–10 minutes (or broil for 2–3 minutes) until the cheese is melted, bubbly, and browned to your liking. Let it rest 3–5 minutes before slicing so the crust sets up firmly.
